It’s day three of vegetables for breakfast and I feel compelled to share my go-to green smoothie, one that I have been making since my graduate school days.
Despite being bright green, you do not taste the greens, only the pina colada flavor from the frozen pineapple and coconut milk. I did not use canned coconut milk for this but rather coconut milk beverage. Feel free to use canned coconut milk if that is what you have on hand, or can find. However, I would use 1 part coconut milk to 2 parts cold water to replace the coconut milk beverage.
This creamy, dreamy smoothie is perfectly portable in my travel cup (stroller walks with Nick!) and especially energizing after my morning long runs or teaching spin class. You can bump up the protein with a scoop of your favorite plant-based protein powder, or up the sweetness with a bit of stevia, if you like.
