Lemony Avocado-Spinach Wrap (fast & easy)


  • 5 packed cups baby spinach leaves
  • 1 teaspoon finely grated lemon zest
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon extra virgin olive oil
  • fine sea salt and freshly cracked black pepper
  • 4 6-inch (whole wheat tortillas
  • 4 oz mild creamy goat cheese, crumbled
  • 1 large, firm-rip avocado, peeled, pitted and sliced


  1. In a medium bowl, toss the spinach with the lemon zest, lemon juice and olive oil; season with salt and pepper to taste.
  2. Divide spinach mixture between tortillas. Top with cheese and avocado, dividing evenly. Roll up like burritos, enclosing filling, or like jelly rolls (ends open).
