It is that time of year, when the last of the zucchini bounty is ready for use. My husband and teenager have kindly asked (pleaded) that I disabuse notions of making umpteen loaves of zucchini bread (who, me?).

So I decided, instead, to round up some alternative zucchini favorites to remind myself, as well as all of you, of some sweet and savory zucchini recipe options.

I still have one zucchini loaf in the mix, but the remainder are a sweet and savory assortment of less than expected offerings. Inaction to being gluten-free and vegan, several are also grain-free and oil-free.

Thank you so much! I love your recipes especially using chickpea flour. Can't wait to try these. Do you think if I added more liquid to your flatbreads they could turn into tortillas? I am going to try anyway!

Hi Marlene! Thank you so much, I am right with you on love of chickpea flour. Yes, I think you could do that with the flatbreads --I suggest blending the zucchini, or chopping it very fine, to make it easier to spread them into tortillas. I may have to try this tomorrow!
