I’m known to throw a few things together that don’t quite qualify as a meal, HOWEVER, I’ve tossed together quinoa, grilled chicken, leftover edameme, kalamata olives and feta cheese drizzled in balsamic vinagrette and been pretty happy about it.
Fake-baked (microwaved) sweet potato with butter and brown sugar!
Making a quick topping/salsa to top a boneless, skinless chicken breast – love to open the fridge and pantry and create something new every time!
Have to tell you, love the idea for your cookbook – you never cease to amaze me!!
It doesn’t have a name, but pumkin seed spread on a slice (or two) of whole wheat toast (toast must be warm for the spread to “melt”!) with sliced avocado and tomato and salt and pepper on top (open-faced). Delicious!
Got this over weekend, can not wait to try so many recipes.

My favorite quick throw together meal is a tossed salad with leftover rotisserie chicken cut into chunks and added to the salad. I also add apple, fetta cheese, glazed pecans, and dried cranberries.

Pan sear a slice of Spam & glaze with a spicy orange sauce, put it on lightly toasted bread with a spread of chunky peanut butter! Kind of my take on Pork Satay! You’re going to love it or hate it!
I throw things together for a salad, and add a hard-boiled or fried egg for protein.
In the winter my go-to is a whole wheat tortilla folded and crisped in the toaster, to which while its still hot I quickly add a half slice of pepperjack, or muenster with a sprinkle of coarse black pepper, for a quick quesadilla. In the summer I spritz a tortilla with water and sprinkle it with coarse pepper and onion powder, before adding a bit of whatever cheese is on hand and an abundance of salad greens, and then rolling it all up into a portable salad.
I go through short stints of eating the same fast-meals, then get tired of them and move on! My most recent stints were popcorn, egg-drop soup, eggs sunny-side up with toast, and microwave chocolate cake (yes, that’s a meal).
I take a cold precooked sweet potato, cube it, place in small pan with a bit of oil, sauté, add chopped onion and spinach or kale, sauté. Place on plate once greens are wilted and everything is heated through. Top with poached or fried egg. Yum-yum and less than 20 min to cook for family of 4.
Eggs with feta and spinach
My favorite quick meal is spinach salad with avocado, strawberries, pecans, and sometimes feta cheese. Yum!
Making an omelet – w/ some cheese and other good things we can usually find in the fridge or garden.
I’m also very happy with good smoothies in my VM — but Alex vetos them! — he doesn’t know what he’s missing!
One of my quick meals is an apple with a tall glass of chocolate milk. If the apple is big enough it can satisfy me for hours and sometimes I smear on a bit of peanut butter!
Steamed salmon in the microwave. I used to have to wait for the oven to heat up and than bake – until I tried a microwave version – I will never go back.
I usually make spaghetti or tuna sandwiches if I’m in a big rush.

I really don’t have a quick favorite recipe…if I need quick I now realize that usually means to-go pickup. Guess I need to check out this book! 🙂

Your book sounds fantastic for a busy mom on a tight schedule! My favorite quick meal is a few sliced olives with goat cheese on multi grain wasa.
Scrambled eggs with zucchini & spinach with a corn tortilla lightly fried in olive oil 🙂 yum!
Believe it or not, one of our go-to quick suppers is your Black Bean Chili Topped Sweet Potatoes. Sometimes I chop and roast the sweet potatoes. That’s delicious, too.
My go-to quickie is low-fat triscuits and cheese. Pretty lame- so your book sounds like a fantastic idea!! Can’t wait to check some of the recipes out!

I love your banana-blueberry muffins so I would love this book! I also have a newborn and need fast meals more than ever. Another of my go-tos is hummus, either with whole grain crackers or as the star in a veggie sandwich.

My favorite super-fast meal is your 2-minute flax muffin in a mug! It is VERY filling so I can have it for breakfast or lunch or for dinner on those nights when you barely have time to eat.
ps. I LOVE your power hungry energy bar book! Being gluten and dairy free, finding healthy granola bars that I can eat is next to impossible. Your bars have all been delicious and I like how customizable they are. My husband gives them 2 thumbs up as well 🙂
