Almond Butter Stuffed Dates (2 Ingredients)
Almond butter stuffed dates are the perfect healthy dessert and power snack all in one! Make them in a few minutes with just two ingredients for a nourishing, yet decadent-tasting, treat.

- 8 large, soft pitted dates (I recommend Medjool dates)
- 4 tablespoons almond butter (see notes for options)
- Optional: chopped toppings, for garnish (see notes below)
Using the tip of a sharp knife, slit each of the dates lengthwise
Use your fingers to open out each date (creating a pocket for the almond butter).
Spoon 1.5 teaspoons of almond butter inside each date.
Gently press the sides of the filled dates together (some of the almond butter will still show). If desired, sprinkle with one of the suggested toppings (see below)
The dates can be eaten immediately, but are best if allowed to chill for at least 1 hour (this allows the almond butter to firm up).
Storage: Store in an airtight container in the refrigerator for up to 2 weeks. I do not recommend freezing the stuffed dates.
