Almond Butter Stuffed Dates (2 Ingredients)

Almond butter stuffed dates are the perfect healthy dessert and power snack all in one! Make them in a few minutes with just two ingredients for a nourishing, yet decadent-tasting, treat.

Ingredients

  • 8 large, soft pitted dates (I recommend Medjool dates)
  • 4 tablespoons almond butter (see notes for options)
  • Optional: chopped toppings, for garnish (see notes below)

Instructions

  • Using the tip of a sharp knife, slit each of the dates lengthwise
  • Use your fingers to open out each date (creating a pocket for the almond butter).
  • Spoon 1.5 teaspoons of almond butter inside each date.
  • Gently press the sides of the filled dates together (some of the almond butter will still show). If desired, sprinkle with one of the suggested toppings (see below)
  • The dates can be eaten immediately, but are best if allowed to chill for at least 1 hour (this allows the almond butter to firm up).

Notes

Storage: Store in an airtight container in the refrigerator for up to 2 weeks. I do not recommend freezing the stuffed dates.

  • finely chopped nuts (e.g., almonds, pistachios, walnuts, pecans)
  • finely chopped dried fruit (e.g., dried cherries, dried cranberries or dried blueberries)
