Vegan Strawberry Cashew Smoothie

My vegan strawberry cashew smoothie is a portable, potable breakfast that is equally satisfying, nourishing, and delicious.  It is also Paleo, and has no added sugar.

Ingredients

  • 1 cup 250 mL chilled nondairy milk
  • 1 cup 250 mL cold water
  • 1 and 1/2 cups 375 mL frozen strawberries
  • 1/3 cup 1.8 oz/50 g raw cashews
  • 1 tablespoon 15 mL fresh lemon juice
  • 1 tablespoon monkfruit powder or sweetener of choice

Instructions

  • Place all of the ingredients in a blender and blend on high speed until smooth. Pour into glasses and serve.

Notes

Cashew Alternatives: Feel free to substitute an equal amount of other nuts or seeds in place of the raw cashews. For example, raw sunflower seed kernels, hemp hearts, pepitas, walnuts, pecans, macadamia nuts, roasted cashews or roasted peanuts (the salt in the latter two is delicious in combination with the strawberries).
Fresh Strawberries: Fresh strawberries can be used in place of the frozen strawberries. Consider replacing the water with a cup of ice for a thicker smoothie.
Alternative Fruits: Just about any other frozen or fresh fruit can be used in place of the strawberries.
