Baked Cinnamon Apple Chips

Ingredients

  • 4 large tart-sweet apples such as Braeburn, Gala or Pippin--core if desired (I leave them in; I'm lazy)
  • 4 teaspoons coconut sugar or granulated sugar
  • 1 teaspoons ground cinnamon
  • Nonstick cooking spray (I love Spectrum brand sprays, especially their Coconut Oil Spray)

Instructions

  • Preheat oven to 325F (160C). Line 2 large, rimmed baking sheets with parchment paper.
  • Using a very sharp knife or a mandolin, cut apples crosswise into 1/8-inch (3 mm) thick slices.
  • In a small bowl, combine sugar and cinnamon.
  • Arrange apple slices in a single layer on prepared baking sheets. Spray with cooking spray and sprinkle with cinnamon sugar mixture.
  • Bake in preheated oven for 35 to 40 minutes or until edges are browned and slices are dry and crispy.
  • Transfer chips (still on the baking sheet) to a wire rack and let cool completely (they will crisp, on the baking sheet, more as they cool). Eat!

Notes

Tip: Feel free to use your favorite oil, or melted butter, in place of the nonstick spray. Just be sure to brush it on very thinly.
Storage: Store the cooled baked cinnamon apple chips in an airtight container in a cool place for up to 3 months.
