Baked Cinnamon Apple Chips

- 4 large tart-sweet apples such as Braeburn, Gala or Pippin--core if desired (I leave them in; I'm lazy)
- 4 teaspoons coconut sugar or granulated sugar
- 1 teaspoons ground cinnamon
- Nonstick cooking spray (I love Spectrum brand sprays, especially their Coconut Oil Spray)
Preheat oven to 325F (160C). Line 2 large, rimmed baking sheets with parchment paper.
Using a very sharp knife or a mandolin, cut apples crosswise into 1/8-inch (3 mm) thick slices.
In a small bowl, combine sugar and cinnamon.
Arrange apple slices in a single layer on prepared baking sheets. Spray with cooking spray and sprinkle with cinnamon sugar mixture.
Bake in preheated oven for 35 to 40 minutes or until edges are browned and slices are dry and crispy.
Transfer chips (still on the baking sheet) to a wire rack and let cool completely (they will crisp, on the baking sheet, more as they cool). Eat!
Tip: Feel free to use your favorite oil, or melted butter, in place of the nonstick spray. Just be sure to brush it on very thinly.
Storage: Store the cooled baked cinnamon apple chips in an airtight container in a cool place for up to 3 months.
