The extra-easy snack I am sharing today is a perfect way to combine a love of outdoor activities (like running and walking) with the bliss that is autumn: Baked Cinnamon Apple Chips.
If you have apples on hand, you can easily whip these together in a matter of minutes. Following a slow bake and some cooling, you’ll have a feel-good, taste-great snack that (trust me) everyone will love.
These baked cinnamon apple chips are a fantastic snack option for Thanksgiving, too, so be sure to give these a trial run before next week so you can boast about their deliciousness.

Benefits of Apples for Running
Apples, in general, are a great snack for running and exercising in part because they are rich in quercetin, a natural flavonoid that exists in the skin of many fruits and vegetables.
Quercetin offers a host of antioxidant, anti-carcinogenic and anti-inflammatory effects, several studies (1, 2) suggest it may improve your exercise performance, too, by increasing endurance performance and maximal oxygen consumption (VO2 max). Take that, Doritos!
Eating some of these apple chips each day may very well improve your runs and keep the doctor away, but the cinnamon should share the credit: recent studies (3, 4) indicate that eating as little as 1/2 tsp of ground cinnamon per day can lower LDL (“bad”) cholesterol levels, boost cognitive function and memory, and even have a regulatory effect on blood sugar levels.
Ingredients
The exact amounts of each ingredient are indicated in the recipe card at the end of the post. Toggle between US Customary (volume) and Metric (weights) for preferred measurement option.
- tart-sweet apples, such as Braeburn, Gala or Pippin
- coconut sugar or granulated sugar
- nonstick cooking spray
Step by Step Instructions
- Preheat oven to 325F (160C). Line 2 large, rimmed baking sheets with parchment paper.
- Using a very sharp knife or a mandolin, cut apples crosswise into 1/8-inch (3 mm) thick slices.
- In a small bowl, combine the coconut sugar and ground cinnamon.
- Arrange apple slices in a single layer on prepared baking sheets. Spray with cooking spray and sprinkle with cinnamon sugar mixture.
- Bake in the preheated oven for 35 to 40 minutes or until edges are browned and slices are dry and crispy.
- Transfer chips (still on the baking sheet) to a wire rack and let cool completely (they will crisp, on the baking sheet, more as they cool). Eat!

Storage
Store the cooled baked cinnamon apple chips in an airtight container in a cool place for up to 3 months.
