Ingredients

  • 1 medium red beet scrubbed, peeled and chopped
  • 1 sweet crisp apple such as Fuji or Honeycrisp), cored and chopped (peeling optional)
  • 1 navel orange peeled
  • 1/2 English cucumber (aka hothouse cucumber)
  • 2 tablespoons fresh lemon juice
  • 1 chunk peel fresh ginger about 1 1/2 inches long
  • 2 cups ice water more or less to preference
  • optional: 1 to 3 pitted medjool dates

Instructions

  • Add the chopped beet, apple, orange, cucumber, lemon juice, ginger, and optional date(s) to a high-speed blender.
  • Add the ice water to the blender container.
  • Blend until completely smooth, adding more water (or a few ice cubes) as needed to reach your desired consistency.
  • Taste and adjust—add a little more lemon for brightness or a date (or more dates) for sweetness, if you like.
  • Pour into 2 glasses and serve immediately.
