During the holidays, when food and cooking is all about hospitality, I’ve made something entirely for me, a concoction I know–with 100% certainty–that no one else in my house will desire except me 😉 .

This beet detox smoothie with apple, cucumber, and ginger is naturally sweet from whole fruit, brightened with citrus, and balanced by the gentle warmth of fresh ginger, all blended into a smooth, deeply nourishing drink.

Unlike many smoothies that rely on added sweeteners or powders, this one keeps things simple and ingredient-driven. Raw beet brings that unmistakable earthy depth (and gorgeous color), while apple and orange round it out with natural sweetness. Cucumber and lemon add light freshness.

Enjoy the smoothie as a fresh start in the morning or a reset in the afternoon. Simple, whole, and quietly energizing—this is a beet smoothie you’ll come back to, in any season.

Ingredients for Beet Detox Smoothie

  • 1 medium raw beet, peeled and chopped
  • 1 crisp sweet apple (such as Fuji or Honeycrisp), cored and chopped (peeling optional)
  • 1 navel orange, peeled
  • Juice of 1/2 lemon
  • 1/2 of an English (hothouse) cucumber, chopped
  • 1 1.5 inch piece of ginger, peeled, chopped (or to taste)
  • Ice water (or as needed for blending)

Because this beet detox smoothie is made with whole, fresh fruits and vegetables—including raw beet, apple, and cucumber—using organic produce when possible can be a thoughtful choice. It helps minimize exposure to pesticide residues while keeping the focus on simple, nourishing ingredients.

How to Make Beet Detox Smoothie

  • Add the chopped beet, apple, orange, cucumber, lemon juice, ginger, and optional date(s) to a high-speed blender.
  • Add the ice water to the blender container.
  • Blend until completely smooth, adding more water (or a few ice cubes) as needed to reach your desired consistency.
  • Taste and adjust—add a little more lemon for brightness or a date (or more dates) for sweetness, if you like.
  • Pour into 2 glasses and serve immediately.

Tips

  • For a smoother texture: Chop the beets smaller or blend a bit longer—they’re the toughest ingredient.
  • For a colder smoothie: Chill all of the ingredients before blending.
  • For a sweeter blend: Use a very ripe apple, add the suggested dates, or sweeten with stevia or monkfruit.
  • For a lighter juice-style drink: Add more water and strain, if desired.

Ingredients 

  • 1 medium red beet, scrubbed, peeled and chopped
  • 1 sweet crisp apple , such as Fuji or Honeycrisp), cored and chopped (peeling optional)
  • 1 navel orange, peeled
  • 1/2 English cucumber, (aka hothouse cucumber)
  • 2 tablespoons fresh lemon juice
  • 1 chunk peel fresh ginger, about 1 1/2 inches long
  • 2 cups ice water, more or less to preference
  • optional: 1 to 3 pitted medjool dates

Instructions 

  • Add the chopped beet, apple, orange, cucumber, lemon juice, ginger, and optional date(s) to a high-speed blender.
  • Add the ice water to the blender container.
  • Blend until completely smooth, adding more water (or a few ice cubes) as needed to reach your desired consistency.
  • Taste and adjust—add a little more lemon for brightness or a date (or more dates) for sweetness, if you like.
  • Pour into 2 glasses and serve immediately.

  1. So, if you have a Vitamix, why all the chopping and (especially) grating? It should work fine with all items coarsely chopped…
    Sounds delicious — I look forward to trying it.
    Also, I second the idea that you cannot possibly mention a shrimp pickle soy watermelon dessert and then not elaborate! Especially an award winning one!

    1. Hi! If you have a Vitamix, you definitely do not need to do all the grating/chopping–I’ll make a note of that. But since the majority of people reading have a regular blender, I wanted to make sure they got a drinkable smoothie (rather than a chunky :)). Old habits die hard. I promise to provide more detail about the winning recipe (it was a Mexican popsicle/paleta) 🙂
