Vegan Frozen Yogurt Bark

This delicious and easy 3 ingredient vegan frozen yogurt bark recipe is the perfect healthy snack or dessert option. With just a few simple ingredients, you can create a tasty and nutrient-packed treat that can be varied in countless ways.

Ingredients

  • 2 cups vanilla vegan yogurt (I recommend a thick, Greek-style yogurt, but you can use any dairy-free yogurt you like)
  • 3/4 cup diced fruit (see notes for ideas)
  • 1/4 cup granola (and/or nuts and seeds)

Instructions

  • Spread the vegan yogurt in an even layer over a lined baking sheet (I use parchment paper).
  • Top with diced berries and other fruits of your choice.
  • Sprinkle with granola and/ or chopped nuts and seeds.
  • Place the pan in the freezer and freeze for at least 4 hours until firm.
  • Cut or break the bark into pieces. Eat and enjoy!

Notes

Note: The nutrition calculation was done using Kite Hill Greek Style Vanilla Plant Based Yogurt, diced strawberries, and granola.
Storage: Store the cut or broken pieces of frozen bark in an airtight container, stacked between pieces of parchment paper or wax paper., for up to 3 months.
Fresh fruit ideas: consider using blueberries, raspberries, blackberries, diced strawberries, diced peaches, diced bananas, diced apricots, , kiwi, mango, papaya, or halved pitted cherries.

Additional Flavor & Topping Ideas

    • Add a drizzle or swirl: Drizzle or swirl in some maple syrup, agave nectar, chocolate syrup, fruit jam, marmalade, or other fruit preserves.
    • Add chocolate: Add chocolate chips, chocolate shavings, or the above mentioned chocolate syrup.Use the tip of a knife to swirl into the yogurt before freezing.
    • Add coconut: Sprinkle the top of the yogurt with unsweetened coconut shreds or dessicated coconut.
    • Add fresh herbs: Scatter the top of the yogurt with fresh mint leaves or basil leaves.
    • Add nut butter or seed butter: Mix the vegan yogurt with a few tablespoons of your favorite nut butter or seed butter, in a bowl, before spreading the yogurt mixture on the sheet pan. Or heat the nut/seed butter slightly and swirl into the yogurt after spreading. For example, almond butter, peanut butter, cashew butter, coconut butter (not coconut oil), tahini, or sunflower seed butter.
    • Add extracts or spices: Mix the vegan yogurt with a teaspoon of vanilla extract, almond extract, lemon extract, rum extract or orange extract before spreading. Or mix in 1/2 to 1 teaspoon of your favorite spice, such as cinnamon, cardamom, or ground ginger.
