This simple and refreshing treat is everything your easy summer needs. It showcases your favorite fruits, takes minutes to prepare, looks gorgeous (and impressive, in case you are sharing!), and requires no cooking.

Different Types Of Vegan Yogurt

Dairy-free yogurt is made in the same manner as traditional dairy yogurts. The difference is that they are made from one of the many varieties of plant-based milks, such as coconut milk, soy milk, oat milk, almond milk and cashew milk. The yogurts are available plain, or in different flavors.

  • Almond Milk Yogurt: Look for Greek style almond milk yogurts for use in the yogurt bark, since it has some fat and is thick and creamy.
  • Coconut Milk Yogurt: Coconut yogurt tends to have a rich, creamy texture and subtle coconut flavor. The slightly higher fat content lowers the likelihood of iciness in the yogurt bark.
  • Soy Milk Yogurt: Look for Greek style soy yogurts for use in the yogurt bark. It is especially thick and creamy.
  • Cashew Milk Yogurt: Cashew milk yogurt tends to be creamy and rich (very close to to dairy yogurt IMHO).
  • Oat Milk Yogurt: Oat milk produces a mild, slightly sweet flavored yogurt. It is not as thick as some other nondairy yogurts, but can still be used to make the frozen bark.
  • Pili Nut Yogurt: Pili nuts are native to Southeast Asia and are similar to almonds in taste and texture. Though they are called nuts, they are actually drupes (like coconuts), making them a great option for anyone with tree nut allergies. It is used to make a non-dairy milk, and also a rich and creamy yogurt (Lavva is a brand that makes it).

Which Vegan Yogurt is Best for Vegan Frozen Yogurt Bark

I have had success with every variety of plant-based yogurt. So the overall answer is any non-dairy yogurt you prefer.

My favorite, and recommended option, though, is any Greek style option (akin to traditional Greek yogurt). It is preferable to use one that is not fat-free (having some fat in the yogurt prevents the frozen yogurt from being icy). Greek style yogurt varieties are thick and creamy, producing an especially luscious and creamy frozen bark. Beyond that, consider the following when making your yogurt choice:

  • Ingredients: Look for yogurts with minimal added sugars and natural ingredients. 
  • Probiotics: Many dairy-free yogurts are just like dairy yogurts in that they contain live and active cultures for added health benefits. Yes, please.
  • Allergies and Dietary Restrictions: Be mindful of potential allergens like nuts, soy, or gluten when choosing a yogurt, especially if you plan to share with others.
  • Protein Content: The protein content for different vegan yogurt can vary. A lot. Some have a hefty amount. Others, very little. You can choose any option you please, but take a lookout the label to know what you are buying.

  1. Vegan Yogurt
    • Any variety, but I recommend using a thick option (e.g., Greek-style).
    • Choose a sweetened yogurt, or opt for plain yogurt (and sweeten as desired with maple syrup or sweetener or your choice)
  2. Fresh Fruits
    • e.g., diced strawberries, blueberries, blackberries, raspberries, diced peaches, diced bananas, diced apricots, , kiwi, mango, papaya, or halved pitted cherries
  3. Granola / Nuts / Seeds

  • Step One: Spread the vegan yogurt in an even layer over a lined baking sheet (I use parchment paper).
  • Step Two: Top with berries and other fruits of your choice.
  • Step Three: Sprinkle with granola and/ or chopped nuts and seeds.
  • Step Four: Place in the freezer and freeze until firm.
  • Step Five: Cut or break the bark into pieces and enjoy!

Tips for Success

  1. Use a thick and creamy vegan yogurt (that contains some fat). You can use any dairy-free yogurt you like, but keep in mind that thicker yogurts (such as Greek-style yogurts that contain some fat will produce the creamiest results.
  2. Keep pieces relatively small. Chop large pieces of fruit into small pieces. Chop nuts and seeds into relatively small chunks as well.
  3. Line the baking sheet with parchment paper. The liner allows for easy removal of the frozen bark. If you do not have parchment paper, use foil, wax paper or plastic wrap to line the surface of the sheet pan.
  4. Plan ahead. It will take approximately 4 hours to completely freeze the bark. If possible, make the bark the day before you plan to serve / eat.

Storage

Store the cut or broken pieces of frozen bark in an airtight container, stacked between pieces of parchment paper or wax paper., for up to 3 months.

Additional Flavor & Topping Ideas

  • Add a drizzle or swirl: Drizzle or swirl in some maple syrup, agave nectar, chocolate syrup, fruit jam, marmalade, or other fruit preserves.
  • Add chocolate: Add chocolate chips, chocolate shavings, or the above mentioned chocolate syrup.Use the tip of a knife to swirl into the yogurt before freezing.
  • Add coconut: Sprinkle the top of the yogurt with unsweetened coconut shreds or dessicated coconut.
  • Add fresh herbs: Scatter the top of the yogurt with fresh mint leaves or basil leaves.
  • Add nut butter or seed butter: Mix the vegan yogurt with a few tablespoons of your favorite nut butter or seed butter, in a bowl, before spreading the yogurt mixture on the sheet pan. Or heat the nut/seed butter slightly and swirl into the yogurt after spreading. For example, almond butter, peanut butter, cashew butter, coconut butter (not coconut oil), tahini, or sunflower seed butter.
  • Add extracts or spices: Mix the vegan yogurt with a teaspoon of vanilla extract, almond extract, lemon extract, rum extract or orange extract before spreading. Or mix in 1/2 to 1 teaspoon of your favorite spice, such as cinnamon, cardamom, or ground ginger.

  • 2 cups vanilla vegan yogurt, (I recommend a thick, Greek-style yogurt, but you can use any dairy-free yogurt you like)
  • 3/4 cup diced fruit, (see notes for ideas)
  • 1/4 cup granola, (and/or nuts and seeds)

Instructions 

  • Spread the vegan yogurt in an even layer over a lined baking sheet (I use parchment paper).
  • Top with diced berries and other fruits of your choice.
  • Sprinkle with granola and/ or chopped nuts and seeds.
  • Place the pan in the freezer and freeze for at least 4 hours until firm.
  • Cut or break the bark into pieces. Eat and enjoy!

    This is very easy and refreshing! My 2 year old gobbled up his pieces. I think he was surprised that I let him have seconds and thirds :). Thanks for mentioning the greek style vegan yogurt, it came out very very creamy.

    I made this for the 4th of July using raspberries and blueberries, chopped toasted pecans and a drizzle of maple. Huge hit! It was loved by everyone and was fun and easy to make. Thank you for the inspo!
