Calling all hedonists! It’s chocolate pudding time.

That’s right, chocolate. Uh-huh, pudding. Yup, it’s the New Year, time to revamp your diet for improved health and vitality.

May this chocolate pudding be the first step to a brand new you.

Here’s what this humble, no-cook, sugar-free, velvety, chocolate-y pudding has to offer towards your New Year’s health goals:

  • Boost Happiness: Yes, it is all in your head that chocolate makes you happier. More precisely, it’s in your brain: cocoa powder is rich in phytochemicals that enhance the production of various feel-good chemicals in the brain, notably serotonin and dopamine.
  • Detox: Whether you ate one too many marshmallow Santas (who, me? yes, me), want to re-boot your digestive system in general, or anywhere in between, the avocado in this pudding delivers. It is very high in both insoluble and soluble fiber. The high fiber content of avocados makes them a good detox food to lower HDL cholesterol levels and manage diabetes while the “good” fats in avocado help your body to absorbs vitamin A, a potent antioxidant that is involved in the natural detox process.

Vegan Chocolate Avocado Pudding {no-cook, easy}

Prep Time: 5 minutes
Total Time: 5 minutes

Creamy and decadent-tasting vegan chocolate avocado pudding, made in minutes with no cooking! It is date-sweetened, healthy, Paleo and gluten-free.

Ingredients

  • 1 medium, ripe, Haas avocado
  • 2/3 cup (packed) soft, pitted dates (e.g., Medjool)
  • 3 tbsp unsweetened natural cocoa powder (use raw cacao powder if strictly raw)
  • 1/2 cup coconut milk (full-fat, well-stirred)
  • 1/8tsp fine sea salt

Instructions

  1. Throw these raw chocolate avocado pudding ingredients into a food processor or  high-speed blender. Start blending on slow and then crank up the blending speed to high.
  2. Continue to blend, stopping to scrape down sides and bottom of container, until the pudding looks very smooth and creamy.
  3. Transfer to a covered container and refrigerate at least 2 hours before serving.

Notes

Tip: If the dates are not super-soft, soak in hot water to for 15 minutes (and then drain) before using.

Storage: Store the pudding, tightly covered, in the refrigerator for up to 2 days.

  1. Unfortunately, my blender isn’t as high speed as I thought, so I didn’t quite get the consistency I wanted. However, what I did get was still delish!!! Thank you.
