3-Ingredient Strawberry Lemonade {no added sugar}

Refreshing, delicious, and simple-to-make 3-ingredient strawberry lemonade, sweetend with monkfruit! Just what your summer day needs, it is vegan, keto,  paleo & 31 calories per 8 ounces.

Nick far exceeds his basic status of adorable 3-year-old; he is also a relentless personal trainer.

We ran sprints across the living room from 7:30-8 this morning, followed by weighted leg lifts (I on my back, Nick as the airplane perched on my feet), and, with an abbreviated repast–chocolate milk for him, coffee for me, and muffins for us both–finished with a solid 45 minutes of dancing to the Wiggles.

To make up for the loss of fluids (Nick inherited my sweaty ways), I decided to puree the last of the strawberries on hand for a cold treat. The lemons in our countertop produce basket further guided my choice: a healthy, refreshing batch of strawberry lemonade.

Strawberry Lemonade with No Added Sugar

I did not want Nick to bounce off the walls following his treat, so I opted for a natural, no-sugar sweetener: Monkfruit. Yound can find this in powdered or liquid form, but I have only been able to find the latter online.

I love the natural, bright flavor of the strawberries; the monkfruit enhances it without adding a cloying sweetness. If you cannot find it, you could also use stevia (to taste), or any equal amount of maple syrup (I know t sounds weird, but it goes so well in lemonade, trust me!) or honey (if not vegan). 

How to Make Monkfruit Sweetened Lemonade

Making homemade lemonade s a cinch.You’ll need:

  1. 2/3 cup of fresh lemon juice ( a lemon squeezer makes this so much easier)
  2. 1 and 1/2 pounds of strawberries, washed, hulled (halve them if hey are really big)
  3. 1/3 cup powdered monkfruit

You will also need about 6 cups of cold water.

First, prep the strawberries.

Next, place the strawberries, lemon juice and monkfruit in a blender, along with 2 cups cold water. Puree until smooth.

Pour the mixture into a pitcher and stir in 4 more cups of cold water. Taste the lemonade and add more sweetener or water, as desired.

That’s it!

Nick and I chug-a-lugged a tall glass each. It is the perfect refresher! For a twist, try making this with blueberries (also heavenly).

3-Ingredient Strawberry Lemonade {no added sugar}

Yield: 8 servings

Refreshing, delicious, and simple-to-make 3-ingredient strawberry lemonade, sweetened with monkfruit! Just what your summer day needs, it is vegan, keto,  paleo & 31 calories per 8 oz.

Ingredients

  • 1 and 1/2 pounds (680 g) washed, hulled halved strawberries
  • 6 cups (1.5 L) cold water, divided
  • 2/3 cup (175 mL) freshly squeezed lemon juice
  • 1/3 cup (75 mL) powdered monkfruit (more or less to taste)

Instructions

  1. Place the strawberries, 2 cups (500 mL) of the water, lemon juice and monkfruit in a blender. Process on high speed until completely smooth.
  2. Pour into a blender and add the remaining cold water. Adjust the sweetener to taste.

Notes

Storage: Store the lemonade in a covered pitcher or container in the refrigerator for up to 3 days.

Notes: If you like, you can strain the blender mixture through a fine sieve to remove the tiny seeds. I do not find this necessary.

Made this and it is fantastic as always Camilla. I didn't even think about making my own strawberry lemonade before it was so simple. I learn something new everyday. Used some of the maple syrup (you are right, it is delicious) and a few packets of stevia to sweeten.

Nick does indeed sound like a great personal trainer! How cute. This is excellent, made with some raspberries and strawberries, delish!
