1-Ingredient Vegan Flax Waffles {GF, oil-free, keto}

Delicious, crisp-tender, 1-ingredient Vegan Flax Waffles! They are gluten-free, grain-free, oil-free, sugar-free, keto & Paleo.

Vegan Flaxseed Waffles Made Easy

Flaxseed meal is a remarkable ingredient. I use it all the time as an egg replacement in baking, but I also love its versatility as a primary ingredient for nourishing breads, cookies, muffins, and tortillas.

So, why not use it to make waffles? Specifically, vegan flax waffles?

I have stumbled across recipes for keto and Paleo flaxseed waffles, all made with multiple eggs, added oils or butter, and sweeteners. But, based on some of my previous flax recipes, I suspected I could strip down my rendition of flax waffles to the bare bones. After all, flaxseed meal is:

  • An egg replacement in and of itself (bye-bye eggs)
  • Already rich in natural omega-3 fats (so long, added oils)

As for sweeteners, I prefer to add mine later in the form of a drizzle or downpour of maple syrup :).

I am so pleased to announce that after many (oh, so many) experiments later, I made my hunch a reality: 1-Ingredient Vegan Flax Waffles!

Ingredients for Vegan Flax Waffles

Flaxseed Meal. To make the waffles, you will need flaxseed meal. That’s it, other than some tap water and optional salt.

You can use either golden or regular (dark) flaxseed meal, as pictured above. I strongly prefer the lighter flavor of golden flaxseed meal for these waffles.

Check for freshness. The fresher the flaxseed meal, the better. Flaxseed meal goes rancid if old and/or stored improperly (e.g., exposure to heat and air).

Step by Step Instructions

The flax waffles are very easy to prepare! However, it is imperative that all of the steps be followed. It took about 2 dozen test rounds of waffles to get the process right, so it is unwise to improvise.

Step One: Preheat the Waffle Iron to MEDIUM

Preheat a waffle iron to medium heat. Not medium-high, and definitely not high. This is very important for reasons that will be explained below.

Step Two: Finely Grind the Flaxseed Meal

Using a clean coffee grinder or a blender (regular or high speed), very finely grind the flaxseed meal into a light, fluffy flour. I follow the same step with my 1-ingredient flax tortillas.

Do not skip this step. The irregular pieces of flax in flaxseed meal do not stick together well in waffle form. The waffle pulls apart when the waffle maker is opened, creating a gooey mess (trust me on this one!

Step Three: Mix the Waffle Batter

Place the flaxseed meal in a medium bowl. If using salt, whisk it in.

Whisk the water into the flaxseed meal to create a smooth, blended batter.

Step Four: Let Batter Rest for 5 Minutes

The batter will be loose upon initial mixing. Within a few seconds, it will begin to thicken. Let the batter rest for 5 minutes to thicken more.

Following the 5 minutes of rest, the batter will be thick and gelatinous.

Step Five: Spray the Waffle Plates

Open the preheated waffle maker and spray the plates (both top and bottom) with nonstick cooking spray. Do not skip this step! Even if you have a non-stick waffle iron (I do), you need to use some nonstick spray.

These are not usual waffles. Trust me when I say that I have gone through all of the hard and messy work of testing to make sure these work for you.

The waffles will stick like heck if you do not spray the plates. If sprayed, they release with ease.

Step Six: Spoon & Spread the Batter

Things are about to get a little bit weird. Not hard, but weird. Stay with me.

Spoon the batter onto the sprayed plate or plates. I have a 4-plate maker, so I spoon 1/4 of the batter onto each of the 4 plates. If you have a round maker (about 9-inch/22.5 cm) maker, I suggest spooning in HALF of the batter into the center.

Use the back of a spoon to spread the batter evenly over the plates. The batter is thick and gooey and will not spread like a regular batter. It needs this extra nudge.

Do not worry about working with speed to spread the batter! Take your time. You will understand why in the next step.

Step Seven: Cook the Waffles (ignore the waffle timer!)

Close the lid on the waffle maker and set a timer for 15 minutes.

You read that correctly: 15 minutes. Ignore any and all bells and whistles on the waffle maker; they do not apply to these waffles. This is the trick that makes these waffles work!

In earlier rounds of testing, I was convinced that all-flax waffles were impossible because they were a gooey mess when I opened the waffle maker. I varied the heat, the proportions, the ingredients, and it was still goo, goo and more goo.

Ignoring the waffle timer was my lightbulb moment. In order for the waffles to crisp and cook, they need a slow cook at medium heat. Fifteen to sixteen minutes is perfect with my maker.

You may want to make 1 and 1/2 times the amount of batter to make a test waffle for your maker.

What is the Taste & Texture of the Vegan Flax Waffles?

The flax waffles are very light and crispy on the outside and tender on the inside. Once completely cooled, the waffles become soft (a bread texture).

How to Serve the Waffles

Enjoy the waffles straight away as you would traditional waffles. Drizzle with maple syrup, or branch out with the toppings of your choice, such as agave nectar, fresh fruit, confectioners’ sugar, chocolate shavings or sauce, jam or preserves.

Enjoy the Waffles as Bread Slices

Alternatively, use the waffles as a bread slices! Use the waffles when they are warm and crisp, or cooled and soft. Either way is delicious.

Spread with any and all sweet or savor toppings, open-faced or sandwiched. My go-to? An open-facedflaxa waffle with hummus, avocado, and tomato. Swoon.

FAQ & Tips

Uh-oh, I Opened the Waffle Maker Too Soon. Now What?

If you opened the waffle make before it is finished cooking (i.e., the waffle pulls apart into a top and bottom half), do not fret! Simply close the lid and continue cooking for a few more minutes (the flaxseed batter will “glue” back together).

This is not likely to happen unless you forget to spray the waffle plates (it happens).

Can I Make More (or Less) Batter?

Absolutely. Double or triple the recipe, or cut it down by half. The basic ratio of water to flaxseed meal is 1:1, so for every 1/4 cup (26 grams) of flaxseed meal add 1/4 cup water.

Can I Add Other Ingredients to the Waffle Batter?

Yes! But with limits.

Avoid Sugars

Due to the long cooking time, I do not recommend adding sugar or sweeteners. Sugars of any kind will likely scorch and burn.

The same is true for any ingredients that contain sugar (natural or added). Sweetness can be added on top of the waffles with sugar.

Add Spices & Herbs

Spices and dried herbs can be added to the batter without fear of scorching.

Can the Waffles be Stored?

Yes! The waffles can be made ahead of time and stored for quick and easy breakfasts, or for use as bread.

Store the cooled waffles in an airtight container at cool room temperature for 1 day, the refrigerator for 5 days, or the freezer for up 3 months.

The waffles can be re-warmed and re-crisped by toasting in a toaster or air-fryer.

Ingredients

  • 1 cup (104 g) flaxseed meal
  • Optional: 1/4 teaspoon salt
  • 1 cup (250 mL) water

Instructions

  1. Preheat waffle maker to MEDIUM heat.
  2. Using a clean coffee/spice grinder or a blender, finely grind the flaxseed into a light, fluffy flour.
  3. In a medium bowl, whisk the flaxseed meal and (optional) salt. Whisk in the water until completely smooth.
  4. Let batter stand for 5 minutes to thicken.
  5. Open heated waffle maker and spray the plates (top & bottom) with nonstick cooking spray. DO NOT SKIP THIS STEP.
  6. Spoon batter on the plates of the waffle maker (if using a large, 4-waffle maker, use 1/4 of the batter for each waffle; for a smaller round maker, spoon in 1/2 of the batter).
  7. Use the back of a spoon to spread the batter evenly over the plate(s).
  8. Close the lid and cook the waffles for 14 to 16 minutes (ignore the timer on the waffle maker! Set a separate timer).
  9. Open the waffle maker and remove the waffles. Serve immediatley with your favorite toppings or cool and store (see notes below).

Notes

Storage: Store the cooled waffles in an airtight container at cool room temperature for 1 day, the refrigerator for 5 days, or the freezer for up 3 months.

Flaxseed Meal Tips: Be sure to use fresh flaxseed meal; it should not have any smell. Golden or regular flaxseed meal can be used, but the former has a much lighter flavor.

Do Not Add Sugar to Recipe: Do not add sugar or sweetners to the recipe. The long slow cooking can lead to scorching if sugars are added.

These waffles look fantastic thankyou! What kind of waffle iron do you use? Mine does not adjust the heat

Hi Dee! The one I have now us Krupa waffle maker (my 20 year old cuisinart one finally died— it was great, too). Gosh, I don’t think I’ve ever seen a waffle iron that does not have a heat / settings-adjustment. That would make waffle-making tricky!
