Vegan Keto Sunflower Seed Bread (Oil-free, Nut-free, Grain-free)

My vegan keto sunflower seed bread is equal parts scrumptious, frugal and easy to make! It is also nut-free, oil-free, & grain-free.

Nut-Free, Grain-Free & Egg-Free Bread Made Simple

Calling all bread lovers! I know you’re ready and waiting for a slice of this nutty, yet nut-free, toast-worthy loaf of goodness.

This quick, simple and so-easy bread–made with humble sunflower seeds–is an invitation to fall baking. As in, if there is a reason to be a little less sad that (1) summer is coming to a close and (2) we’re still staying home for dinner, this bread is it.

This lovely loaf has a wholesome texture that you might swear is made from wheat flour, with just the right amount of crustiness at the edges, and speckled with crunchy sunflower seeds on top.

Ingredients for the Sunflower Seed Bread

Here’s the (brief) list of ingredients you need to make this wonder bread happen in your own kitchen:

It is perfectly ok if the flour has a few uneven bits of seeds, it will add to the texture of the bread (i.e., no need to sift).

Will the Sunflower Seeds Turn the Bread Blue or Green?

If you are new to baking with sunflower seeds, blue-green bread may sound like crazy talk. 

As strange as it sounds, ’tis true: baking with ground sunflower seeds (ground into a flour, or sunflower seed butter) can lead to dramatically green-blue results. For example, this test loaf I made:

While alarming, the color is 100% harmless. It is caused by a chemical reaction from the chlorogenic acid (a healthy polyphenol) in sunflower seeds. When sunflower seeds are crushed (flour, seed butter), they react with themselves. This reaction is further enhanced by the alkalinity of baking soda

You can embrace the color (especially at Halloween or St. Patrick’s Day) or work around it adjusting the alkaline/acid balance of the recipe.

How to Prevent Green Color with Sunflower Seed Flour

To ensure that your bread does not turn green, boost the acidity with:

  1. Baking powder instead of baking soda 
  2. A generous dose of lemon juice (the acidity prevents the reaction)

The acid from the cream of tartar (in the baking powder) and the lemon juice keep the bread a neutral beige-brown.

How to Make the Vegan Keto Sunflower Seed Bread

Step One: Grind the Sunflower Seed Kernels into Flour

First things first: grind the sunflower seeds into flour. It is easy and will only take about a minute. 

Place the seeds in a high-speed blender, a food processor, or a flour mill and process into a fine flour. For the former two options, use the pulse function, as opposed to continuous power, to prevent over-processing and turning the flour into nut butter (delicious, but not what you want here).

Step Two: This All of the Dry Ingredients

Once the sunflower seeds are ground into flour, whisk them with the remaining dry ingredients in  a large bowl until blended.

Step Three: Add the Wet Ingredients

Combine the water and lemon juice in a bowl or measuring cup. Pour into the dry ingredients and stir until combined into a moist, stiff dough.

Step Four: Shape the Bread Dough Into a Loaf Form

Gather and press the dough into a ball shape. I moisten my hands with a bit of water at this point to smooth out any cracks in the dough.

Place the dough ball on a large piece of plastic wrap, wax paper, or parchment paper. Enclose the dough and press, roll and flatten into an oblong loaf shape that approximate the size of a 9×5-inch loaf pan. This bread does not change shape (much), so the pre-bake loaf shape will determine the post-bake shape.

Unwrap the dough and place it in a 9×5-inch loaf pan that has been sprayed with nonstick cooking spray.  Do not press out the dough to conform with the pan.

If you, like me, are pro-crunch, press some additional sunflower seed kernels into the top of the dough.

Pretty easy, right?

Step Five: Bake the Bread

Bake the bread in a preheated 375F oven for roughly 55 minutes until the loaf is golden brown and a toothpick inserted near the center comes out clean. The bread is not a high-riser, but it does expand (some) as it bakes.

Step Six: Cool the Bread

Let the bread cool in the pan for about 10 minutes before removing and cooling completely on a cooling rack.

Once cool, slice ultra-thin, thick, or anywhere in between. That’s literally all there is to it :).

FAQ

How Should I Store the Vegan Keto Sunflower Seed Bread?

Store the cooled bread in an airtight container at cool room temperature for 2 days, the refrigerator for 1 week, or the freezer for up to 6 months.

What is the Total Amount of Net Carbs Per Slice of Bread?

The net carbohydrates (total carbohydrates minus fiber) for 1 slice of bread is 2.5 grams.

Measuring Tip: For best results, I strongly recommend weighing the ingredients –especially the coconut flour –with a kitchen scale.

Can I Use Psyllium Powder in place of Whole Psyllium Husks?

I do not recommend it. This bread does not work well with psyllium powder. Be sure to use whole psyllium husks.

Can I Use Something Other Than Flaxseed Meal?

Yes! An equal amount of ground chia seeds can be used in place of the flaxseed meal.

Can I Use Ready-Made Sunflower Seed Flour in Place of the Sunflower Seed Kernels?

If you already have sunflower seed flour on hand, you can use it in place of the sunflower seed kernels. Use an equivalent weight (312 grams), which is roughly 2.75 cups of sunflower seed flour.

Ingredients

  • 11 oz (312 g) raw sunflower seed kernels (about 2 and 1/4 cups of kernels)
  • 1/2 cup (56 g) coconut flour
  • 1/4 cup (20 g) whole psyllium husks
  • 1/4 cup (26 g)  flaxseed meal
  • 2 teaspoons baking powder
  • 1/4 teaspoon fine sea salt
  • 1 cup (250 mL) water
  • 1 tablespoon (15 mL) lemon juice
  • Optional: additional raw sunflower seed kernels for topping

Instructions

  1. Preheat oven to 375F (190C). Spray the interior of a glass or ceramic 9x5-inch (22.5x12.5-cm) loaf pan with cooking spray.
  2. In a high speed blender, food processor or flour mill, grind the sunflower seeds into a fine flour; transfer to a large bowl.
  3. Whisk the coconut flour, psyllium husks, flaxseed meal, baking powder, and salt into the sunflower seed flour.
  4. Combine the water and lemon juice in a measuring cup or bowl; add to the flour mixture, stirring until completely blended into  a thick, moist dough.
  5. Shape and squeeze the dough into a ball and place on a piece of plastic wrap, wax paper or parchment paper. Use the wrap to shape the dough into an oblong loaf shape to fit the pan.
  6. Unwrap the dough and place into the prepared pan (do not press it out to conform to the pan). If desired, press sunflower seeds on top.
  7. Bake in the preheated oven for 55 to 60 minutes until deep golden brown and a toothpick inserted near the center comes out clean.
  8. Cool in pan for 10 minutes before removing the loaf to a cooling rack. Cool completely before slicing.

I was looking specifically for a sunflower seed bread recipe because almond flour is extortionate. Turns out this is the best textured Keto bread I've ever made, by far. Lunch time I will be grilling a couple of slices with feta. Tomorrow I will be making two loaves and will add some activated yeast to one loaf to try out. Thank you so much.

I love this bread, and sometimes wish for a larger loaf. Do you think it would work to double and bake as one big loaf? I assume the baking time would need adjustment- any recommendations?

Hi Robin! So glad you like the bread :) Breads like this can be tricky if they are made larger (prone to collapse and/or gooey centers). But you could definitely double the recipe and make two loaves at once.

Apologies for that not being clear. The ingredients list the amount for the sunflower seeds kernels and then guides you through grinding the seed kernels in the recipe. You will use an equivalent weight of sunflower seed flour as sunflower seed kernels (312 grams), which is roughly 2 and 3/4 cups of sunflower seed flour. I have added a note about using ready-to-go sunflower seed flour--thanks Jeri!

Hi, can i use baking soda instead of powder? I live in Africa and cant find cream of tarter to make gluten free baking powder.

Hi Clara! Yes, you can definitely use baking soda. The one issue, as I note in the recipe, is that it can turn the bread green. It does not affect the bread on any other way, it just looks unusual! But if you add more acid (lemon juice or vinegar), you can keep it from going super-green or green at all. I suggest using 3/4 teaspoon baking soda and a total of 3 tablespoon lemon juice (or 2 tablespoons vinegar).

I tried using chickpea flour as a replacment for almond flour and the crowd was not pleased. Thanks for having alternative recipes for thos of us who are allergic to nuts!!!

Oh boy, I am sure they were unhappy! I have thrown many a chickpea flour baking experiment in the garbage because it was inedible. I totally get it. I do have quite a few breads with chickpea flour (no nuts) on the site that DO work, though. But it is a good rule of thumb that chickpea flour will not work in place of almond flour
