Learn how to make instant coconut hot cereal that is grain-free, vegan, keto, and oh-so-satisfying! Made with coconut flour, coconut flakes, and flaxseed meal, it is thick, creamy, oatmeal-like, & ready to eat in minutes. 


Raise your hand if packets of instant oatmeal, cream of wheat, or other hot cereals have made an appearance in your past.

Both of my hands are up, way up! I stashed a trove of assorted instant hot cereal packets in my dorm desk drawer throughout college when I could not make it to the dining hall. With the help of my trusty plug-in kettle, I made many an instant meal (well beyond breakfast!) while studying in my room.

The convenience is hard to beat, but if you are looking for a grain-free version, you won’t find it at the grocery store.

I mean it when I say this is an “instant” hot cereal: just add boiling water, stir until it thickens, and top with any and all of your favorite toppings. Just like the instant packets you remember!

Ingredients

The exact amounts of each ingredient are indicated in the recipe card at the end of the post. Toggle between US Customary (volume) and Metric (weights) for preferred measurement option.

More good news: the mix for this instant cereal is limited to three ingredients!

I like to add a bit of salt, too, but it is optional.

I chop the coconut flake fine so that the pieces are closer in size to rolled oats. Hence, you can begin with either large flake or small flake coconut.

Step by Step Instructions

Step One: Prepare the Hot Cereal Mix

Combine the finely chopped coconut flakes, coconut flour and flaxseed meal in a jar or tightly covered container. Tightly seal and store in a cool, dry place.

Note: The recipe I have constructed makes enough for 6 servings of hot cereal, but you can double or triple the recipe if you have a larger crew in the house.

Step Two: Make a Single Serving of Hot Cereal

To make a serving of cereal, combine 1/3 cup of the hot cereal mix with 1 cup boiling water in a mug or bowl.

Stir until the cereal thickens (about 30 seconds to 1 minute). That’s it! The cereal is creamy and thick, with a texture that is a cross between oatmeal and cream of wheat.

One third cup of porridge mix may not sound like much, but it is. Coconut flour is extremely absorbent, so when the 1/3 cup mix is combined with 1 cup of boiling water, the result is a big bowl of rich-tasting, creamy hot cereal. With a whopping 10.2 grams of fiber per serving, this is one extremely satisfying breakfast that I guarantee will keep you feeling full all morning long.

Pack single size portions to take along to work, school or wherever you might be headed. Or just enjoy a warming, satisfying breakfast at home that takes seconds to prepare.

Serving Suggestions

Top the porridge with one or more of the following options:

  • Non-dairy milk: Such as soy milk, almond milk, cashew milk, hemp milk, or oat milk. If you eat dairy, use your favorite dairy milk.
  • Sweetener: A drizzle or sprinkle of maple syrup, agave nectar, honey (if you are not following a vegan diet), coconut sugar, or monk fruit sweetener.
  • Fresh fruit: For example, blueberries, raspberries, chopped apples, sliced strawberries, sliced bananas.
  • Dried fruit: For example, raisins, dried cranberries, dried cherries, or chopped dried figs , prunes, apricots or apples.
  • Chopped nuts or seeds: Consider using raw or toasted sunflower seeds, walnuts, pecans, almonds, hemp hearts, green pumpkin seeds (pepitas), or hazelnuts.

FAQ

What can I use in place of the flaxseed meal? You can sub an equal amount ground chia seeds (chia meal) for the flaxseed meal.Enjoy!

Can I use milk in place of water when making the porridge? Yes. Use your favorite milk (nondairy milk, or dairy milk, if you do not follow a vegan diet).

What can I use in place of the coconut flour? The coconut flour cannot be substituted for another flour. This recipe is unique to the properties of coconut flour.

    • Hot Cereal Mix: Combine the coconut flour, coconut, flaxseed meal and optional salt in an airtight container or jar.
    • To Prepare 1 Serving Hot Cereal: In a bowl or large mug, combine 1/3 cup hot cereal mix and 1 cup of boiling water. Stir until combined and porridge thickens, about 30 to 60 seconds. Serve with any of the suggest stir-ins or toppings, as desired.

    Notes

    Storage: Store the hot cereal mix in an airtight container at room temperature for up to 6 months or the freezer for up to 1 year.

      I have been CRAVING hot cereal on a low carb diet! I tried some other recipes that ended up more like gelatinous glue than cereal. Yuck! Then I tried this, which is so much like cream of wheat! I left my coconut flakes a bit big because I was so excited to try it. Wow!! Perfect texture!! So happy! Just a bit of extra chew from the big coconut flakes, but still awesome!!

You saved my life this morning. We have been living on fruit salad in the morning, due to grain allergies and it hasn’t been satisfying them. They’re tired of it.
